Bread Baker, Assistant- Overnights


We are seeking a passionate and dedicated Bakery Assistant to join our Bread Team.

The ideal individual is strong, caring, dynamic, and self-motivated, with a keen attention to detail and a dedication to consistency. You value constant improvement, and take pride in your work. You have made baking your career, or are considering it. You must also be comfortable with change – our bakery in growing, and with that comes a shift from old processes to new processes. Much of that change will be in motion as you begin your time at Good Bread.

This is a serious, high-volume production role—handling over 300 rounds of bread per shift —where consistency, precision, and a brisk pace are essential.

Duties

  • Pull, proof, score and bake all breads and/or buns for the day

  • Follow production schedules to meet daily volume targets

  • Support daily production prep as required

  • Maintain cleanliness, organization, and food safety standards

  • Work collaboratively with the entire team to ensure quality and efficiency

  • Comfortable working in a fast-paced environment

  • Ability to work full time, overnights from Tuesdays to Saturdays (6pm-2am likely)

  • Reliability, punctuality, and a team-oriented approach

Physical Requirements

  • Continuous standing/walking for all tasks

  • Frequent lifting and carrying up to 50 lbs

  • Frequent turning and reaching

  • Constant use of both hands, with wrist rotation, flexing, and occasional forceful gripping
